Cream Puffs, Profiteroles, Pâte à Choux oh my!

I love this recipe and it works every time! After trying a few others from the internet I finally found one that is near fool-proof. Choux pastry is finicky, the smallest details can affect the shape and how it rises. Check out this recipe from the Tummy Train here!

Feel free to double this recipe if you want two trays but for me, it made around 16 decent size choux shells.

Italian Feast!

Conceptualizing food ahead of time always leads to the best meal. I love a good theme or concept that I can use to inspire a menu. Whether I get it from a cookbook, or a magazine or just daydream about it, it can be magic when you execute the vision for your guests.

A friend of mine, whom I met at a breadmaking cooking class was coming over for dinner so I wanted to come up with a theme for the dinner. I love eating Italian food so I thought I could play around with some flavours in the Mediterranean realm.

Can we talk about how good this season of Top Chef is?!?!

It’s no secret that I am a MASSIVE fan of this show. I can confidently say that I haven’t missed a season, regular or all-stars, or even the Masters versions of this show. These chefs are no joke. Some of the challenges they throw at them are pure evil….entertainment.

This season brings us to beautiful Colorado (pushes aside hanging smoke), and I must say, I’m learning a lot about the place.
